TEPUNG GOMAK
(sumber: Pn Zahrah Roziz)
Bahan-Bahan "A"
200 gm kacang hijau
1 biji kelapa parut putih
500 gm gula timbang/hitam (saya prefer gula melaka)
300 gm gula pasir
2 helai daun pandan
Bahan-Bahan "B"
600 gm tepung pulut
1 mangkuk air
400 gm tepung kacang hijau
sedikit garam
Cara Utk Bahan "A"
Kacang hijau direbus hingga kembang.Kemudian tumbuk sampai hancur. Gula timbang dimasak dgn 2 cawan air lalu ditapis. Tenggekkan kuali di atas api yg sederhana besarnya. Tuangkan air gula, kacang hijau, kelapa, daun pandan, gula pasir dan sedikit garam. Masak hingga pekat dan sebati. Angkat dan ketepikan.
Cara Utk Bahan "B"
Uli tepung pulut dgn air dan garam sehingga menjadi doh yg lembut. Ambil sedikit doh, leperkan dan masukkan inti kacang hijau dan bulat-bulatkan. Panaskan air dalam periuk dan masukkan bebola ini. Bila kuihnya timbul bermakna kuihnya sudah masak. Angkat dan golek-golekkan di atas tpg kacang hijau sambil ditekan sedikit agar menjadi leper.
Panduan:
Untuk membuat tpg kacang hijau yg di dalam bahan B, terlebih dahulu kacang hijaunya hendaklah dicuci bersih dan ditoskan. Kemudian disangai/sangar hingga kekuningan. Setelah itu barulah dikisar halus sendiri atau dihantar kekedai utk dimesen halus.
