WADEH UDANG

Ini siaran ulangan. Dah ada entry bab wadeh udang ini cuma ada sket jer adjustment dlm resipi kali ini. Anyway, dah lama tak makan wadeh udang buatan sendiri. Yg pasti, bila ada 'pasar malam' pasti itulah salah satu yg dicari, selain keropok lekor dan burger Ramly. Heheh, bukan apa, kalau teringin nak makan satu dua, beli aje lerr- kan senang. Takyah susah-susah nak menyerakkan dapur! Tapi, kalau ada masa terluang, jomlah kita buat seperti yg saya buat semalam. Rasanya OK kot! Nak tau cuba lah..



WADEH UDANG

Bahan-Bahannya :
150 gm kacang dhal hitam (ulundu) yg telah dibuang kulit(rendam 4-5 jam)
450 gm tepung gandum
1 biji bawang besar (potong dadu)
1 tangkai daun kari (dihiris)
½ sudu teh soda bicarbonate atau potas
1 sudu makan yeast segera
350 -400 gm udang hidup
1 sudu teh garam
2 batang lada hijau (dihiris)
1 cm halia (dihiris)
½ sudu teh serbuk lada hitam
1½ cawan air (lebih kurang)

Peraturannya :
Kacang dhal dikisar bersama air sehingga halus. Masukkan halia dan kisar lagi. Kemudian tuangkan ke dalam bekas dan bubuh yeast dan potas. Kacau rata-rata. Seterusnya, masukkan potongan/hirisan lada hijau, bawang dadu, daun kari, garam dan serbuk lada hitam. Akhir sekali masukkan tepung gandum dan adun sehingga rata semuanya. Perapkan adunan ini selama 2-3 jam.

Ambil sekeping plastik dan basahkan sedikit dipermukaannya. Dengan tangan yang basah, ambil sedikit adunan dan bulatkan seperti donut. Letakkan udang pada adunan itu lalu digoreng dengan minyak yang banyak. Hidangkan bersama lada hijau.

  2. Memang wadeh atau "vadai" asalnya plain jer mama. Kaum pendatang dari India yg telah berhijrah ke rantau ini khususnya Spore ni telah mengubah-suai juadah ini dgn membubuh udang demi menepati citarasa org2 kat sini. Seingat saya, wadeh ni begitu popular sejak saya kecil2 lagi hinggalah sekarang. Yg plain ones selalunya dibuat utk "vegetarians".

    I'm always having problems determining whether the reader is male or female based on their pseudonyms. Some names are clear cut while others are not. I've came across a reader's name/pseudonym was almost certainly a male but when we corresponded, it turned out the person is a female. Once again my apology to you.

    Heheh, siap dgn no bas dan tahun 'membeli' lagi eh. You have a very good memory indeed! Actually kat saya tgl di Commonwealth Dr dulu pun ada sorang mamak ni yg jual vadai udang yg sedap. Dia bawak semacam dulang rotan bulat yg besar dan junjung kat atas kepala dia. Dan dia berjualan di kawasan perumahan flet dari pintu ke pintu (biasalah waktu 1970an dulu). kadang2 tu dah standby, dengar suara dia je terus bukak pintu awal2 utk beli...

  9. salam bro..to b honest i learn to bake mostly by following ur recipes..most of the time tk menghampakan..i juz did vadai udang tadi and tell u wat..."suami ku suka"...! garing diluar lembut di dalam..cuma dhal tu i tk larat nk buat kulit utk semua...i blend terus dgn kulit..hahaha..bro ada fb tk...le i add..thx..
