BUTTERMILK POUND CAKE


Sebenarnya, hajat di hati nak buat Kek Baldu Merah ataupun Red Velvet Cake- kek yg ramai dah akui keenakannya. Bila terkenangkan frostingnya yg gunakan campuran mascarpone dan Philadelphia cheese tu yg buat teragak2. Almaklumlah, kat rumah ni ramai yg harus berdiet, kalau tak, bertambah2lah 'sehat'. So, sementara saya kumpulkan semangat utk buat kek baldu merah ni, saya pun cuba mencari resipi kek yg menggunakan buttermilk. Bukan apa, sayang kalau buttermilk ni expire nanti. So, googled punya googled, terjumpa resipi Buttermilk Pound Cake yg telah mendapat banyak reviews yg baik. So, here it is, dalam bahasa Inggeris. Sekali2 nak gak tulis dlm bhs omputih, heheh.... (sebenarnya dah pagi ni, malas nk translate/alihbahasa kpd bhs Melayu... 

Buttermilk Pound Cake
 
Ingredients
375 gm all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
230 gm butter
500 gm white sugar (original recipe uses 600 gm)
6 eggs
2 tablespoon lemon extract (from 1/2 lemon) - I also added a little lemon zest/rind
1 teaspoon vanilla extract
250 ml buttermilk

Directions
1) Preheat oven to 325 degrees F (165 degrees C). 
2) Grease one 10 inch tube pan. Mix together the flour, baking soda, and salt. Set aside.
3) In a large bowl, beat butter with sugar. Mix in the eggs, one at time, beating well after each addition. 
4) Stir in the lemon and the vanilla extracts. Gently mix in flour mixture alternately with the buttermilk. 
5) Pour batter into the prepared pan.
6) Bake in preheated oven for 90 minutes. ( I baked for 45-50 mins)
7) Do not open oven door until after one hour. When cake begins to pull away from the side of the pan it is done. 
8) Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. 

Note : I drizzled the cake with chocolate ganache  & garnished with strawberries.

  6. Masya'allah .... gebu nyer kek ni. Kat sini butttermilk paling senang nak carik. Matsaleh kalau buat kek suka sangat gunakan buttermilk - buat pancake pun diorang pakai buttermilk. Tapi kan, Abg Rozzan ... gula dia kusmangat .. 1/2 kilo! Manis sangat tak kek ni cos Hani ni tak kuat manis.

    Cuba jgn tk cuba sis! Berbaloi tau..
    Kalau tk silap saya, buttermilk ialah susu yg dah dicampur dgn bahan asid bakteria dalam satu proses penapaian (fermentation). Ia akan membuat susu tu menjadi sedikit masam dan pekat. Cakap senangnya, seperti tairu atau yoghurt. Kalau tkde, anda bolehlah gunakan 1 cawan susu yg dicampur dgn 1 sudu besar cuka atau jus buah lemon. Harap maklum.

    Yup, I initially thot so (abt the sugar). However, as it turned out, the high sugar content is well balanced by the effect of buttermilk and the 2 tablespoon lemon juice which I added in. At the end, the cake is not too sweet. Try it, you'll know what I mean, ya.

  9. salam abg rozzan! first of all, thk u fr sharing yr recipes. i dah try a number of yr recipes and majority nyer sedap and menjadi! :-)
    i nak tanya sikit, about bundt pan yang you used to bake this pound cake. i baru beli a bundt pan and tried baking orange cake fr my father in-law. why is it that my cake skin becomes dark or black dengan cepat when the inside of my cake belum fully cooked?

    First of all, TQ krn sudi mencuba resipi2 dari sini. Abt the bundt pan tu, saya rasa mungkin resipinya yg kurang sesuai utk di bubuh dalam bundt pan tu kot ataupun, suhu nya kurang tepat , or maybe bancuhan adunan tu kurang rapi. It could be anyone of these.... Next time cuba kurangkan suhu nya sbb bundt pan ni mmg lekas dan kuat resap suhu panas. Hope that helps ya.
