CHOC & ALMOND CUPCAKES



















Baked these cupcakes last night and did some ganache topping on them this afternoon. Guess they're a little messy though. I, for once am not really into cupcakes frosting/icing. Probably becoz I think they're too sweet and that nobody at home will eat the end-product or probably I'm not good enough. However, I've done some cake icings before- way back in the 80s, the easy ones of course. Nowadays, everthing is so elaborate, beautiful and cute. So, just to share some pics and the recipe which I've obtained from Internet.

CHOC CHIP & ALMOND CUPCAKE

Ingredients
110gm--1/2cup castor sugar
110gm--1/2cup unsalted butter
110gm--1 cup plain flour
60gm chocolate chips
60gm ground almonds
2 drops of almond essence ( I used 1 tsp vanilla instead)
1 teaspoon of baking powder
2 eggs

1½ tablespoons of milk

Method
Put the sugar and butter into a bowl and beat by hand with a wooden spoon or use a mixer until creamy. Add 1 egg and beat in. Add the second egg and beat in. Sieve in the flour and the baking powder and mix gently. Add the ground almonds, chocolate chips, almond essence and mix gently

Divide the mixture into cupcake cases which have been placed into a baking tray. I use a large spoon. This makes about 12 cupcakes in large cases. I fill each case about half to 3/4 full. Pre heat the oven to 180C. Bake in the middle rack of the oven for 15 to 20 minutes. DO NOT OPEN THE OVEN for at least 15 minutes as the cakes will sink. They need to be firm to touch. Remove from the oven and cool. You can have a chocolate ganache on (half melted chocolate mixed with half fresh dairy cream(the thick type) and spread on the top of each cupcake and choc chips scattered on the top.

    > Actually, I'm still getting used to using unsalted butter. To me, mcm kurang masin but my daughters ckp sedap. Wallahu'alam ya. But I still love the add-ons- Glico Pocky, Hershey's cookies & cream bar, M7M chocs & the choc ganache. mmmm...

  5. u can try doing chocolate frosting; Resepinya mudah saja: 150gm dark cooking chocolate n 1/2 cup sour cream. Cairkan chocolate then put aside for abt 3 mins.Once cool,mix in sour cream. Beat till fine n glossy. Spread onto the cakes.
