Maaf kerana dah lama 'hilang' dalam dunia blogging. Rasanya sejak FB dah menjadi perhatian umum dewasa ni, blog-blog dah mula mengambil back seat.. seperti Fotopages yg suatu ketika dulu pun pudar ditelan alam apabila blog2 mula tumbuh bagai cendawan tumbuh lepas hujan. Namun berbanding FB dan blog, FB ternyata lebih canggih dan senang digunakn - its user friendly. Nak share status, nak share resipi, gambar, dll - semuanya at your fingertips. Dan rata2 skrg ni, ramai yg dah berkongsi resepi2 mereka. Mungkin masa dulu blum ada wadah yg mudah dan senang seperti FB utk digunakan. Alhamdulillah.. <br />

time its for my ex- sec school classmate birthday. As if the
chocolate-filled mousse in between the layers are not enough, I had
placed some Belgium praline chocolate on top of the cake. And that is
why I called Sinful! If you ever bake this cake, you may have noticed
some flaws LOL! Never mind, there's always a third attempt. Didnt manage
to get much of the dissected cake piece though.<br />

Salam Sejahtera. Dah lama x update blog.... dah mcm bersarang gitu!! Apa nak buat, tuntutan pekerjaan yg semakin bertambah sehinggakan masa yg terluang utk berblogging pun nmpk2nya semakin sedikit. Apapun, terima kasih kpd anda yg masih berkunjung utk menyemak resipi2 di sini.<br />

Seperkara lagi, diam x diam dah lebih enam tahun sejak kelahiran blog ni. Waktu tu tk banyak lagi blog2 yg berkongsi resipi yg pelbagai. Kini Alhamdulillah, dah byk blog dan FB2 perseorangan atau berkumpulan yg sedia berkongsi informasi dan resipi. Rasanya mcm dah nak retire aaa. Mentelah lagi, tersentak jugak tuhari bila nk upload pics kat blog, PICASA bagitau yg kuota 1 GB utk memuat naik dan store pic atas tajaannya dah capai tahap maksima. Nak guna khidmat PICASA kena lah beli extra storage at a price. Ni, bila saya dah beli extra storage, nak upload pics tu kdg2 'distorted' atau kurang jelas. Macam x bagi saya upload jer.... haizzz.....semakin hampirlah usia penutupan blog ni huhu.....<br />

Walau bagaimanapun, di sini saya saja nak berkongsi pics gubahan pulut kuning yg saya ilhamkan khas buat memenuhi permintaan teman sepejabat sewaktu majlis walimah anak beliau tempohari. Harapan semoga gubahan ini dapat menepati citarasa 'mak pengantin' yer..<br />

Bulan puasa dah masuk hari ke sembilan Ramadhan... sungguh cepat masa berlalu. Namun setiap kali lepas berbuka, mesti terfikir - esok sahur nk makan apa? buka mlm nanti nk makan apa?... Haiz..... kalau dulu sewaktu arwah mak masih hidup, senang jer... tak perlu dok terpikiak-pikiak... Semua di tanggung beres..<br />

Sekarang ni bila kita pulak yg jadi ketua keluarga dan ibubapa, hah... fening selalu! Bukannya kita nak melayan nafsu-nafsi bulan puasa yg lazimnya berbagai-bagai ragam, cuma... memikirkan hidangan/juadah yg ringkas jer. Famili saya mmg tk gemar atau tak terbiasa dgn santapan nasi ketika bersahur.... Alhamdulillah, senangler jawabnya.. roti ke, cekodok ke, atau apa2 lah yg ringan. Kalau nk sentuh nasi dgn pelbagai lauk pada pagi2 ..hish... mcm "bercinta"-kata orang dolu2. Kekadang tu saya pun cuma makan sebiji-dua korma dan segelas susu. Insya'allah boleh bertahan 14 jam hingga berbuka kelak.<br />

Ketika berbuka puasa pula, nasi pun tak menjadi pilihan utama. Even a one-dish meal pun cukup utk kami. Yg penting kita dapat berbuka dgn hidangan yg ringkas dan dapat menhilangkan rasa lapar. Apapun, terpulang kpd masing2 - ada yg mesti menjamah nasi setiap kali berbuka dan juga sahur. Dah terbiasa, ok lah kot. :-)<br />

Harini, kebetulan anak kami request nak makan ikan yg dibakar bersama sambal cili padi. So, utk tidak menghampakan permintaan beliau, this was what we had for Iftar...<br />

Terima Kasih kerana sudi lagi menjenguk ke blog RSR yg dah agak lama menyepi dan tak ter'update'. Sebelum meneruskan coretan, saya ingin mengucapkan Selamat Berpuasa kepada kaum Muslimin yg dah masuk hari ke 9 Ramadhan.<br />

Kebelakangan ini, rasanya macam terlalu sibuk dgn urusan pekerjaan dan peribadi yg menyebabkan blog ni terpinggir seketika. Saya masih meneruskan aktiviti2 kulinari saya, cuma kdg2 tu tak sempat nk nak update resipi ataupun pic yg telah diambil. Mentelah pula, saya rasa dewasa ni dah ramai yg berkongsi resipi2 di alam siber seperti di FB dan blog2 masakan mereka tersendiri. Tak seperti sewaktu saya mula berblogging 6 tahun dahulu, pada tahun 2006. Sekarang, ramai yg dah sudi berkongsi ilmu pengetahuan mereka dan saya rasa ini adalah satu perkara yg sangat baik, Apalah guna jika ilmu yg dipinjamkan kepada kita, tidak dpt dimanfaatkan bersama.<br />

Apapun, kesinambungan blog RSR ni tergantung kepada keadaan dan kesempatan waktu yg ada pada diri saya. Kepada mereka yg pertanyaannya saya terlepas pandang atau terlambat reply, harap dimaafkan. Sebenarnya, saya terasa macam di persimpangan - samada ingin meneruskan blog ini ataupun dihentikan. Tumpuan utama saya sekarang ni adalah kpd pekerjaan dan famili. Keterbatasan waktu dan tuntutan pekerjaan yg semakin mencabar betul2 membuat saya di ambang dilema. Walau apapun senarionya, Insya'allah, jika Webmaster terus membenarkan perkongsian RSR di alam siber, blog ini akan tetap dibuka utk yg masih sudi berkunjung. Juga, dari masa ke semasa jika ada peluang dan waktu yg terluang, saya masih memantau blog ini dan mungkin juga mengupdate resipi2 utk kongsian bersama, Insya'allah.<br />

<b><span style="font-family: "Calibri","sans-serif"; font-weight: normal;">1) Tepung diayak </span></b>ke dalam sebuah bekas.</div>

2) Bubuh garam dan gula di dalam air hangat, kacau rata.<br />
3) Panaskan minyak, majerin dan minyak sapi lalu masukkan sedikit demi sedikit ke
dalam bekas berisi </div>

tepung tadi sambil
dikacau sehingga adunan rata. </div>

4) Kemudian, tuangkan air hangat yg dah bercampur
gula/garam ke dalam adunan tepung dan uli </div>

sehingga menjadi
adunan doh yg lembut.</div>

5) Buatlah beberapa bebola mengikut saiz yg anda
inginkan. Rehatkan adunan sebentar (kira-kira ½ jam).<br />

Ambil dua bebola doh yg dah direhatkan tadi dan canai hingga menjadi 2 keping bulatan. Ambil satu keping dan isikan
inti kentang, siatan isi ayam dan keju slice. Ambil sekeping lagi doh dan tangkupkan
ke atas kepingan pertama. Kelimlah seperti mengelim epok-epok (karipap). Buatlah
begini sehingga selesai doh dan inti. </div>

<b style="color: #0b5394;">Cara-Cara : </b><br />
<br />
1. Ayak almond powder dengan gula aising. Ketepikan dahulu.<br />
<br />
2. Masukkan gula kaster dan putih telur dalam satu bekas. Ambil sebuah lagi
bekas yg besar sedikit dan letakkan air panas. Masukkan bekas gula dan telur
tadi ke dalam bekas air panas. Kacau perlahan2 sahaja sehingga gula larut dan
suhu larutan gula dan telur mencapai 50 - 55C….Agak2 gula dah larut boleh
lerr..Angkat dari mangkuk/bekas air panas tadi.<br />
<br />
3. Setelah dikeluarkan dari bekas air panas, masukkan esen vanilla dan pukul
adunan telur dan gula ini dgn kelajuan maksima (tinggi) sehingga menjadi pekat
dan bertanduk.<br />
<br />
4. Masukkan sedikit-sedikit, gula aising dan almond powder yg telah diayak tadi
ke dalam adunan putih telur tadi. Kacau rata dgn menggunakan spatula sahaja. Harus
diingat, adunan ini lebih pekat dari adunan membuat kek.<br />
<br />
5. Masukkan adunan yg dah siap ini ke dalam piping bag. Picit ke atas dulang
oven yg dah dialas dgn baking paper. Jarakkan setiap satu lebih kurang 3
sentimeter. Ambil toothpick dan pecahkan mana-mana gelembung udara yg terbentuk
di permukaan Macarons untuk mengelakkan permukaan Macarons menjadi berlubang
bila dibakar.<br />
<br />
6. Biarkan permukaan Macarons kering atau tak melekat di tangan sebelum dibakar
selama lebih kurang 30-40 minit sebelum dibakar. ( bergantung kepada cuaca juga
ni. Puteri letak Macarons ni di bawah kipas supaya ia cepat kering.<span style="mso-spacerun: yes;"> </span>Sebelum dibakar, test dulu dgn jari, kalau
dah tak melekat, bolehlah dibakar).<br />
<br />
7. Bakar di dalam oven pada suhu 140 darjah Celsius selama 20-25 minit –
bergantung kepada oven masing2. Kemudian sejukkan sebelum diletak intinya.</span></div>

Salam Sejahtera. Agak lama juga dapur di blog ini tak berasap. Bukan kerana apa, tuntutan di tempat kerja dewasa ni memerlukan perhatian yg lebih. Apatah lagi, bila pulang ke rumah dah fatigue...tak larat...<br />

Namun demikian saya masih juga memantau perkembangan dunia kulinari ini dan bersembang-sembang dgn kawan2 baik di FB ataupun di blog ini. Jika ada komen yg belum terjawab, harap bersabar yer.<br />

Bagi diri saya, seberapa boleh, saya suka berkongsi resipi2 yg bermutu (insya'allah) di dalam blog saya. Juga, Insya'allah akan saya sertakan resipi2nya dgn terperinci supaya anda yg mencubanya akan berjaya menghasilkan sesuatu hidangan/juadah tu seperti saya.<br />

Seperkara lagi, kalau dah blog kita ni dibuat public/umum... dan betul niat/nawaitu kita nk berkongsi resipi / ilmu yg dipinjamkan kepada kita oleh NYA, tulis jer lah resipi2 tersebut, heheh. Tak perlulah kita tunggu dan memberi hanya jika ada yg meminta secara privet. Tak rugi atau luaknya jika kita berkongsi ilmu dunia ni...<br />

OK, berbalik kepada entry pada kali ini, iaitu Talam Seri Pisang. Sebenarnya resipi kali ini saya gabungkan (fusion) kuih tradisional Nagasari dgn dua lapisan yg berlainan perisa dan warna. Juadah ini pula dapat saya sumbangkan kpd Majlis Maulid di rumah teman sekolah saya semalam. Alhamdulillah, teman saya berikan feedback/review yg baik dari para tetamu yg datang.<br />
<br />
OK, nak citer sketlah bab kuih2 talam tradisional ni seperti talam ubi, talam cendol, talam keladi dan juga kuih puteri salat/ serimuka, talam jagung, nangka. dan banyak lagi. Kuih2 begini selalu mempunyai lapisan atas yg lembut, lemak dan cukup manisnya.<br />
<br />
Lazimnya kalau kita nak membeli kuih, contohnya puteri salat, pilihan kita selalu nak yg cantik dan sedap... dalam ertikata kuih tersebut mempunyai rupa, warna dan rasa yg enak. Tetapi rasa ni sesuatu yg subjektif laa. Tetapi dalam dunia kulinari, sedap selalunya memberikan gambaran ttg bahan2 yg digunakan bermutu, dan proporsi antara santan, telur, tepung dan gula adalah tepat/baik.<br />
<br />
Sejak dari dulu lagi saya telah pelajari cara membuat Kuih Puteri Salat dari arwah ibu saya. Sebagai contoh; utk membuat satu adunan./loyang kuih ini, yg basic/asas, bahagian atasnya, atau serikayanya, harus menggunakan sekurang2nya 6-8 biji telur, 3 cawan santan pekat, 1 hingga 1 suku cawan gula dan hanya 2 sudu makan tepung beras/tepung!! Bayangkan hasil kejadiannya nt... Very creamy, sedap tp agak terlalu lembut/lembik utk dipotong. So saya selalu adjust kan dgn menggunakan 5-6 sudu makan tepung. But I will not compromise on the taste! Insya'allah tetap sedap. Cuma bila kita potong kuih ini ia taklah secantik jika kita keraskan bahagian atasnya.<br />
<br />
Tapi ada sesetengah resipi yg menggunakan sukatan santan yg sgt kurang (lebih air dari santan), tepung yg terlalu banyak dan telur yg terlalu sedikit... 2-3 biji utk satu loyang kuih. Hasilnya? Kuih yg sangat mudah dan cantik dipotong, cantik dipandang tapi adakah rasanya dapat menepati citarasa anda? Mungkin iyer atau mungkin tidak, terserah kpd setiap individu. Wallahu'alam.<br />

Satu lagi, kalau anda tk nak gunakan telur yg banyak, anda boleh buat kuih2 talam yg langsung tak pakai telur seperti resipi Talam Seri Pisang ni.. Cuma, jgn lokek dgn santan pekat pula yaa... Kita nak makan yg sedap2 so bahan2 harus cukup ya :) <br />

Tetapi jgn tersalah tafsir. Saya berkongsi info ini sekedar mahukan anda semua menghasilkan sesuatu yg bermutu. Bukan utk anda mendapat pujian tetapi utk kepuasan diri anda krn telah berjaya menghasilkan sesuatu dgn terbaik mungkin, Insya'allah.<br />

1. Panaskan kukusan
dgn secukup air. Gunakan api yg sederhana besarnya. Sementara menunggu air mendidih, siapkan adunan
lapisan bawah. </div>

2. Tuang adunan
lapisan bawah ke dalam periuk. Ambil satu lg periuk yg kecil sedikit dan
didihkan air ke dalamnya. Bila mendidih, tindihkan periuk berisi adunan tadi ke
atas periuk air yg sedang mendidih dan kacaulah adunan ini selama 10 minit
sehingga naik wap. Kemudian tuang adunan ke dalam loyang dan kukus selama 20
minit.</div>

3. Sementara menunggu lapisan pertama masak, siapkan
adunan Lapisan Tengah dgn kaedah yg
sama. Cuma, bila dah naik wap, masukkan potongan2 pisang tadi ke dalam adunan
dan kacau sebentar. Setelah lapisan pertama masak, baru tuangkan pula adunan
pisang ini. Kukus sehingga 30-40 minit.</div>

4. Kemudian siapkan pula Lapisan Atas juga dgn kaedah yg
sama. Bila dah naik wap, tuangkan ke atas lapisan tengah dan kukus selama 20
minit. </div>

5. Setelah siap di kukus, buka penutup kukusan dan laplah
permukaan kuih dgn tissue jika terdapat wap di atasnya. Biarkan betul2 sejuk,

Sebenarnya, Kuih Talam kali ini merupakan adaptasi dari resipi Talam Keladi yg biasa saya buat. Tetapi, oleh kerana di rumah terdapat ubi kayu dan keledek Jepun, tercetus idea utk menggabungkan kesemua ubi kayu, ubi keledek dan ubi keladi tersebut di dalam resipi kali ini. Justru, saya namakan Talam U3K. Namun, kalau anda hanya ingin menggunakan hanya keladi, orait gak...<br />

1. Campurkan tepung beras, santan cair, gula dan garam di dalam sebuah bekas lalu ditapis ke dalam periuk. Masak bahan ini di atas api yg sederhana selama kira-kira 15-20 minit sehingga ianya agak pekat sedikit lalu matikan api. </span></div>

<span style="font-size: 12.0pt;">2. Kemudian masukkan ketiga2 ubi yg telah dikukus/rebus tadi dan kacau/gaul sebentar. Tuangkan adunan ini ke dalam loyang yg telah disapu dgn sedikit minyak masak. Ratakan dan kukus adunan ini selama kira-kira 20 minit. </span></div>

<span style="font-size: 12.0pt;">3. Setelah itu, tuangkan bahan lapisan tengah serikaya ke atas nya. Kukus lagi hingga masak selama kira-kira 30 minit. Buka penutup kukusan dgn hati2 dan lap permukaan kuih dgn kain halus atau tissue jika terdapat kesan air di permukaannya. </span></div>

Bercakap tentang Sambal Goreng Pengantin ni, dahulunya kita selalu terbayang lauk ni hanya bila tiba musim Raya jer sbb nak buat dia perlukan bermcm2 bahan dan juga masa yg lebih. Even my late mum pun jarang2, kadang2 masak lauk ni. So, kalau tk Raya, susahlah nk jumpa Sambal Goreng Pengantin ni. Yg jenis biasa- tempeh/tahu mmg biasalah. Hari2 pun boleh masak. Seperkara lagi, SGP ni menggunakan byk bahan dan ramuan dan setentunya byk belanja. Tapikan, kalau nk makan sedap, soal ongkos tu tolak tepi kejap lerr. Lagipun, yg puas pun kita sendiri, yg happy banget pun kita! <br />

Sambal Goreng Pengantin ni terdapat pelbagai versi. Saya selalu stresskan bahawa apa pun lauk/juadah... kita yg buat dia mengikut citarasa sendiri. Setiap resipi tu cuma memberi asas atau garispandu kpd rasa yg asli dan tulin mengikut tradisi turun temurun. Asal rasa asli nya tk tercemar, selainnya ikutlah citarasa kita masing2. 1. Santan cair diramas dengan asam jawa dan belacan, diperah dan tapis - diketepikan.</div>

3. Masukkan santan cair yang telah ditapis dan kacau sebentar.</div>

4. Kemudian, masukkan daging, paru, limpa dan hati yang telah dipotong dadu dan digoreng, lada merah, lada hijau, bawang putih yang telah digoreng, bawang goreng dan daun limau purut. Kacau hingga rata.</div>

5. Seterusnya, masukkan santan pekat, garam, gula dan serbuk perasa(jika suka). Kalau airnya kurang, bolehlah tambah dgn santan cair lagi.<br />

6. Masak sehingga kuahnya mendidih dan pekat sedikit dan rencahnya resap kedalam daging, paru dan bahan-bahan lain. Kemudian masukkan lada kering yang telah digoreng. Gaul rata dan sesuaikan rasanya mengikut citarasa anda. Tambahlah apa yg perlu.</div>

Sebenarnya, saya ni actually pun, not so keen utk terima order dek kerana masa yg tak mengizinkan ataupun tarikh yg tak bersesuaian. Cuma kekadang tu, terasa terbuka hati dek permintaan orang yg berhajat tu... Tapi kalau tarikhnya x ok, saya pun x dapat tunaikan lerr. Harap maklum yer.<br />

Seminggu yg lalu dapat saya penuhi request seorang teman sekolah lama. Kebetulan saya pun off. Tempahan dua loyang kuih Puteri Salat dapat saya tunaikan. Hah, yg ni sebenarnya repeat order.. Yg buat mereka tertarik katanya ialah.. lapisan pulut di bawah serimuka pandan tu yg saya bubuh dgn kelapa dan kacang lepat. Rasanya sama seperti memakan lepat kacang dgn tambahan 'kastad telur pandan' di atasnya. Kalau sesiapa nk cuba, resipinya akan menyusul kemudian yer.<br />
